How To Cut A Pineapple

Some pineapples are sold with their crowns removed. If the crown is still intact, cut it off but not the skin that is attached to it. Hold the pineapple by the stalk with the part where the crown was resting on your chopping board. Cut off the skin to reveal eyes which are arranged in neat rows. Then cut off the eyes by cutting on both sides of the rows of eyes. Go down diagonally on the pineapple. Once that's done, cut off both the base where the stalk is and the place where the crown was. Next, cut the pineapple into quarters. You can cut each quarter into halves and you'll end up with 8 juicy wedges. You can get more wedges if you cut it smaller. Note: When eating pineapple wedges, start from the crown and finish with your last bite at the base which is the sweetest part of the fruit.
Choosing a pineapple Look for one that looks plumb and fresh. Choose one that is already ripening, that is, a good part of the fruit has turned yellow. Look at the stalk. Check that it is freshly cut and not dried up.
