Ingredients
- 1 cup of fresh pineapple slices
- 1 small shallot sliced thinly
- 3 tbsp pineapple juice
- few sprigs cilantro
- a few black pepper corns
Preparation
Cut a pineapple, remove the skin and eyes.
Don't know how to cut a pineapple?
No worries. Follow the few steps outlined. Once done, cut the pineapple into wedges of about 1 inch thick. Then cut the wedges across into thin slices. Get a cupful of it. Put the slices into a bowl. (Enjoy the rest of the pineapple wedges after chilling it).
Slice the shallots thinly and put it on the sliced pineapple.The aroma and taste of sliced shallots mixed with tangy fruit juice or vinegar is simply delightful!
Next, take a few slices of pineapple and squash it with a spoon to get the juice. The juice comes out readily. Get about 3 tablespoonfuls of it and pour it on the pineapple.
Mix the pineapple with the juice and shallot.
Put it in the fridge to chill. Crack pepper corns on it and top it with a few sprigs of cilantro just before serving it with your BBQ meat or roast.
